The estate has always been characterised by high-quality agricultural products combined with a deep respect for the environment and for protecting the health of its customers. Certification Since 1982, San Vito has been cultivating its crops in accord with organic principles, and produces its wines and olive oils without any use of weed-killers, pesticides, or synthetic chemical treatments. From 1985 on, all of San Vito's products have been certified by the A.I.A.B. (Associazione Italiana Agricoltura Biologica), and the winery is a member of I.F.O.A.M. (International Federation of Organic Agricoltural Movement). The current certifying authority is I.C.E.A. (Istituto per la Certificazione Etica ed Ambientale), which ensures observance of the E.U. 2092/91 regulation and international norms, in particular the NOP (National Organic Program) of the U.S. USDA. Method of cultivation San Vito's observance of organic farming means that it uses only substances derived from organic minerals, both for fertilisers and anti-pest treatments. This allows the soil to maintain its productive capacity without leaving any chemical residues in the soil or in the wines.

The tour will begin you first to the rooftop terrace of the cellar from where you will be able to enjoy the breathtaking view of the Chianti Valley below and listen to the history of the estate and the territory. The estate is situated in a very elevated position for Chianti Classico ares, 600 meters above sea level. After arriving at the Fattoria Santa Stefano, your tour begins with an introduction to the grounds and history of this charming farmhouse. After learning about the building’s construction and local food and wine production, you’ll enter the farmhouse’s large wine cellar, featuring stainless steel and cement tanks used for the fermentation of their delicious Chianti wines. Then, it's time to visit the small and rustic 18th century cellar, home to the large barrels of French oak where the wine gets transferred and remains for six months to develop its rich and vibrant flavors. In the same cellar, you’ll also find the little barrels used for the production of Vinsanto, a delicious, amber-colored local dessert wine. To finish off the tour, see the farmhouse’s impressive “Orciaia”, where the extra-virgin olive oil is stocked directly after harvesting and pressing. From there, head back into the small wine shop to enjoy a tasting of some of the excellent local wine varieties and delicious extra-virgin olive oil, along with some great local food.

Very interesting and well structured experience. The lady who welcomed us was very kind, she explained to us all the steps of the production of wines and oil with care and passion, patiently answering all our questions. In addition to the oils, he made us taste liqueurs, which were not included in the tasting. All products are, of course, of excellent quality. I would add that the notions learned have been very useful for better understanding other tastings we have done at other companies. So, by comparison, I can confirm the high quality of the overall experience. Definitely recommended!

A top experience! Despite the fact that we had the bad luck to go in the middle of a storm, the treatment was incredible. They allowed us to stay longer and visit the vineyards when the sun came up. Both the wines and the food were spectacular, and very abundant! (tasting of 7 wines with snacks of local products and picnic lunch of 3 sandwiches and fruit also from the area). We are delighted :)

Chinzia was very pleasant and helpful as a guide! We were a tad bit late, so emailed them before hand and she was very accommodating. There is a ristorante and stay nearby to try Tuscan cuisine. The chef can cook Vegetarian options so you need to just ask them. Wine tasting was great and very informative. Not a bery big estate of vineyards to roam around but pretty still
