At the House of Fusion Marrakech, begin this 8-dish fusion lunch class at 08:50 and discuss the class menu over morning coffee. Take this time to talk about your preferred styles of cooking and baking and figure out which dishes you will continue to make even after you return home. Take your newly-learned Arabic to the marketplace and shop from the barrow men and inside the souk. Surround yourself with fresh vegetables, as you get excited about what follows at the prep table. Choose herbs for tea and learn how to "wake up" or "quiet" the green tea. Hear about the use of diffusers and tajine cookware and learn the art of kneading, raking, rolling and chopping herbs in particular ways. Purchase the spices used for cooking, after gaining a greater understanding of their uses. Return to the prep table and immerse yourself in this aromatic world before walking back to your riad.

A great experience with Edwina and her helpers. A great cook with years and years of experience. Edwina is very serious about cooking so this class is not for those who are not here to learn. This cooking class takes place in her large and charming Riad which is charmingly decorated. These cooking classes not only helped us learn Moroccan dishes but helped us learn basics for everyday cooking! I heavily recommend this for serious people who are looking for a lovely cooking class and delicious self prepared Moroccan meal.

We enjoyed the whole package: the brief introduction to the Arabic language, buying our ingredients in the local market using our newly acquired 'Arabic skills', the choice of recipes, Edwina's expert guidance while preparing the food and the delicious meal afterwards. I can't wait to try out the recipes again at home!

We loved our cooking class with Edwina, and appreciated the morning coffee and meal planning session, learning the market lingo in arabic, going to the market and getting her input not only on food but pretty much anything we had questions about, and of course the cooking itself. Edwina always has stories and anecdotes and knows much about Moroccan culture and food in general. She can be tough when needed but always gives positive feedback to finally end up with a surprising number of delicious dishes. As an added bonus, nothing is a secret and she sent us all recipes and even made some tomato salt with us on request which we could keep for free at the end. She also has a small selection of high-quality items available for sale (spices, oils), but will also tell you what to look for if you plan on doing your own market shopping. All around great experience, and while expensive for Morocco, definitely worth it!
